OBJECTIVE: In this project, AGROVIN intends to carry out strategic, multidisciplinary and regional research in the field of viticulture, which allows for the generation of scientific and technical knowledge whose application will lay the foundations for a new way to treat must in order to stabilize the colour and lengthen its useful life. The trigger for all this will have the impact, in the event of the technical success of the project, of increasing the solutions that the market offers for the treatment of musts which may be used in the future to improve the quality of the wines made from them and can thus improve their performance in domestic and international markets. The specific objectives of the project are: – Development of treatments to prevent the oxidisation of the must through ionic exchange technology that makes use of resins. – Development of regenerating and cleaning products. Development of work protocols for the uses mentioned above. Study of the chemical stability of the must. -Technological transfer with the design of a semi-industrial machine.
