Treatment strategies for harvest and fermentation for the production of quality wines, offsetting the imbalances of composition caused by global warming.

OBJECTIVE: This project is led by a public-private consortium participated in by one business partner, AGROVIN SA, and two research centres, the INSTITUTE OF SCIENCES OF THE VINE AND WINE (ICVV-CSIC) and the POLYTECHNIC UNIVERSITY OF VALENCIA. One of the goals that this project seeks to reach is to develop the procedures used in the industry for reducing the alcohol content of wines, to an extent that the increase produced in recent years due to global warming is compensated for, whilst the quality attributes related to good grape phenolic maturity are respected or improved. The second objective of this project is to develop a method and equipment based on powerful ultrasound for the extraction of the polyphenolic potential of the skins and pulp, in red varieties, in addition to overcoming or improving the disadvantages or shortcomings of existing techniques which have the same objective.
