Eco-innovative maceration system based on lfhp ultrasound technology for winemaking.

OBJECTIVE: This is a consortium project led by Bodegas Roda S.A. and participated in by three business partners, PRODUCTOS AGROVIN SA, ADEGAS VALMIÑOR and a technological partner, FUNDACION PARQUE TECNOLOGICO DEL VINO (VITEC). The technical objective of the project is to develop a plan that, using new additives and processes, allows for the development and commercialization of high quality wines free from sulphur dioxide. For this, strategies will be developed that reduce or eliminate sulphur dioxide to ensure the microbiological stability of the wine, preventing the action of the polyphenol oxidase and the chemical oxidation of wines, without ultimately having any negative impacts on the quality of the product. The participation of AGROVIN in this project consolidates it in the Spanish and International oenological solutions market, both at the level of microorganisms and additives and that of technology and processes. It allows for the investigation of new applications of products currently on the market and the development of new products and alternative strategies for the use of sulphur dioxide in oenological products, offering new uses for products and developing more commercial opportunities in the area of additives that are substitutes for sulphur dioxide. This opens up new markets and allows them to gain new customers.
