PVVIN NO MET is a specific fining agent that limits the browning and evolution of musts and wines.

 

Its ability to reduce the concentration of heavy metals, such as iron and copper, slows down enzymatic and non-enzymatic oxidation reactions, thus limiting the browning of the sample and preserving its aromatic potential and typicity (fermentative esters and varietal aromas).

 

Selectively removes phenolic compounds responsible for sample browning.

APPLICATION

  • In musts and wines where it is necessary to reduce the heavy metal content (especially copper and iron), replacing the controversial treatments with potassium ferrocyanide.
  • In musts and wines where it is desired to reduce the oxidizable polyphenolic content. PVVIN NO MET decreases the content of compounds responsible for oxidation and prevents subsequent browning.
