Red-wine maceration – Dosage: > 2 ml/100kg. Working temperature: >12ºC. Time: 2 days.

Flash détente/Thermovinification – Dosage: 2-8 ml/hl. Working temperature: 30-55ºC. Time: 10-30 min.

Clarification and filtration – Dosage: 4 ml/hl. Working temperature: >12ºC. Time: 5-7 days.
