Thiamine Dosage are doses of Thiamine or Vitamin B1. It is a cell growth factor with direct repercussions on alcoholic fermentation.

  • On fermentation kinetics: increases the initial cell population by up to 30% (dose 0.5 mg/l), shortens the cell dormancy phase and allows a faster start of fermentation.
  • It decreases the rates of ketonic acids (pyruvic and ketoglutaric acid) susceptible to combine with SO2. Limits the combination rate of SO2 during storage.
  • Decreases the production of volatile acidity. Thiamine is also a growth factor for lactic acid bacteria.
